Take any box of cake mix. Put into large bowl and hand mix in 2 beaten eggs(or 1/2 c. egg beaters). I add 1 T. oil, if needed, and as much water as needed to make a very stiff batter. Drop onto greased cookie sheets by teaspoonsful. You may add almond flavoring, nuts, lemon zest, chocolate chips......anything else you can think of..... to the cookies for added flavor and texture. Sometimes I put a whole almond on the chocolate fudge cookies before I bake them.
Bake at 375 degrees for 8-10 minutes or so, depending upon your oven. Check by toothpick(just like a cake) to see if they are done.
